Mix flour, salt, and eggs until combined.
Add water until the dough sticks together.
Knead until smooth.
Run through the pasta roller.
Cut in pasta cutter.
Let pasta dry out.
Boil in water with a pinch of salt for 8-10 min
Roast squash at 450 until soft (you can also microwave for 4 min).
Scoop flesh into saute pan, add butter, cream, basil, wine, cinnamon, salt, and pepper.
Cook on medium heat for 10 min.
Add mozzarella.
Serve over fresh pasta.
